2 med. zucchini 1/4 c. Italian style bread crumbs 2 tbsp. Parmesan cheese 2 tbsp. Romano cheese 1/2 c. plus 1 tbsp. Italian dressing Mix bread crumbs and cheeses. Slice zucchini into slices or circles. Dip in Italian dressing, then roll in bread crumb mixture. Place in single layer on lightly greased (I use Pam) cookie sheet. Bake at 475 degrees for 7 minutes. Turn zucchini over and bake 7 minutes more. |
