1 1/2 lbs. red potatoes 2-4 tbsp. melted butter Lemon juice 1/4 c. chopped parsley (or dill)
Bring water to boil with salt and add potatoes. Cover and cook for 15 to 20 minutes. (Slow boil.) Drain and return to pot. Add butter, lemon juice and parsley. Mix. Add salt and pepper.
