2 tbsp. vegetable oil 1 med. onion, chopped 1 can (4 oz.) chopped green chilies, drained 3/4 c. Mahatma rice, uncooked 1 c. water 1 beef-flavored bouillon cube 1 can (16 oz.) Bush's Best light red kidney beans or Bush's Best red beans 1/2 c. (2 oz.) shredded Monterey Jack cheese 1 lb. smoked sausage 1 tsp. Tabasco brand pepper sauce In medium saucepan, heat oil over medium high heat; add onion and chilies and saute 3 minutes. Add rice, water and bouillon cube. Bring to a boil. Reduce heat, simmer covered, 10 minutes until rice is tender. Stir in beans, cheese, smoked sausage and Tabasco. Serve warm. Serves 4. |
