ZUCCHINI QUICHE
 

4 c. grated zucchini
1 c. chopped onion
1 stick butter
8 oz. shredded Mozzarella cheese
8 oz. shredded Muenster cheese
2 eggs
1/4 tsp. oregano
1/4 tsp. basil
2 tbsp. parsley flakes
1 tsp. prepared mustard
1 pkg. Pillsbury crescent rolls

Saute chopped onion and zucchini in the butter for 10 minutes. Beat the egg and add to the grated cheeses and then add to the zucchini mixture. After cheese melts, add oregano, basil and parsley. Take 10-inch quiche dish and line with crescent rolls. Spread mustard over the rolls and add the zucchini mixture. Bake at 375 degrees for 20 minutes.
