Cook until tender: 1 c. hot water 2 tbsp. butter 1/4 c. chopped onions 3 c. zucchini 3 c. summer squash
Mix in: 1 c. sour cream 1 c. 1 c. raw grated carrots
Mix 7 ounce bag seasoned bread stuffing as directed.
Grease casserole dish. Put 1/2 stuffing mix in dish. Add squash mixture. Top with remaining stuffing. Cheese may be sprinkled over top. Bake at 350 degrees for 20-25 minutes.
