2 med. yellow squash 1 med. zucchini squash (both kinds diced) 1 med. onion, chopped 1 c. grated Cheddar cheese 2 tbsp. butter 1 1/2 c. lowfat milk 1 lg. egg, beaten 1 c. Minute rice 1 tsp. Italian seasoning 1/3 tsp. salt 1/2 tsp. black pepper Combine all ingredients in large bowl; mix well. Pour into greased casserole baking dish. Bake at 375 degrees for 35 minutes, or until all liquid is absorbed. Garnish with parsley. 6 servings. |
