ZUCCHINI PANCAKES
 

1/3 c. Bisquick
1/4 c. grated Parmesan cheese
1/8 tsp. pepper
2 eggs, beaten
2 c. shredded zucchini, unpared
1/2 of sm. onion, grated
2 tbsp. butter, pan

Mix all dry ingredients. Add eggs and mix. Add zucchini and onion, folding ingredients together. Melt butter in pan. Cook in pan like potato pancakes turning when golden brown. Serve with sour cream.
