2 c. shredded zucchini 1/2 c. finely chopped onion 1/2 c. flour 1/2 c. mayonnaise 1/2 c. Parmesan cheese 4 eggs, beaten 1 tsp. lemon juice (opt.) Salt & pepper to taste
Mix all ingredients together lightly. Pour onto hot griddle like you would pancakes. A wonderful side dish.
