BUCKWHEAT PANCAKES
 

1 c. Aunt Jemima buckwheat pancake mix
1 c. Amazake rice milk or soy milk
4 egg whites

Spray a non-stick skillet with non-stick coating. Place on a medium heat to warm pan. Mix all ingredients. Pour batter onto hot pan. Turn when tops are covered with bubbles. Turn only once. Serve with fresh fruit spreads, apple butter, or fresh fruit slices.
