FRITTER BATTER
 

1 c. flour - less 3 tbsp.
3 tbsp. cornstarch
1 egg, beaten
3/4 c. milk
2 tbsp. salad oil
1 1/2 tsp. baking powder
1/4 tsp. salt

1 tsp. baking powder
1/4 tsp. salt
1/4 tsp. soda
3/4 c. buttermilk

Sift all dry ingredients - flour, cornstarch, salt, baking powder. Beat milk, egg and oil together. Add all at once to flour mixture. Stir only to mix - not too much. The batter must be thick enough to cover the vegetables, or hold together.

Dip vegetables (potatoes, peppers, onion slices, mushrooms, etc., Drop into deep fryer - brown and serve hot. When make Corn Fritters - use cream style corn - omit milk. the corn makes enough liquid with the added beaten egg and oil.

To make fruit fritters - watch the thickness of the batter, when adding milk. Add 2 tablespoons of sugar to the dry ingredients. Chop apples in small chunks, drain pineapple chunks, cut bananas in 3/4 inch chunks, etc.
