PASTRY FOR QUICHE
 

3 c. flour
1 tsp. salt
1 c. solid shortening
1 egg, separated
1/3 c. water

Sift together flour and salt. Cut shortening into flour, until pieces are size of small peas. Beat egg yolk with water. Sprinkle into flour a little at a time, mixing lightly until dough begins to stick together. If necessary, add more water.

Press together. Wrap and chill for 15 minutes. Divide in half. Roll each portion out on lightly floured surface to circle 1/8 inch thick. Fit into 10 inch pie pan. Brush with beaten egg white. Add quiche ingredients and freeze.
