HOT TAMALES
 

5 lbs. prepared maza
3 lb. pork roast, cut up like stew meat
3 lb. chuck roast, cut up like stew meat
1/2 lb. chili pods, soaked & liquified
3 cloves garlic
1 1/2 tsp. salt or to taste
1 1/2 tsp. oregano
Prepared corn husks & 1 steaming kettle

Buy maza at any tortilla factory. Add about 2 cups meat juice to maza. Cook meat in pot until tender. When cool take from pot and put into chile sauce that has been mixed with flour to make like gravy. Add garlic, salt, oregano and cumin. Cook for 15 to 20 minutes to thicken and absorb spices. Let cool.
