JALAPENO CORNBREAD
 

1 can cream corn
Jalapeno (to taste)
1 onion
1 lb. Cheddar cheese
1 lb. hamburger
1/2 tsp. salt (optional)
Pepper to taste
1 1/4 c. all-purpose flour
3/4 c. Quaker or Aunt Jemima enriched cornmeal
1/4 c. sugar
2 tsp. baking powder
1/2 tsp. salt (optional)
1 c. skim milk
1/4 c. vegetable oil
2 egg whites or 1 egg, beaten

Fry hamburger and onion and salt and pepper. (Drain.) 2 large bowls: 1 bowl, pour cream corn and flour, cornmeal, sugar, baking powder, salt, milk, vegetable oil and eggs. Mix well. In large greased pan, pour 1/2 cornmeal, layered hamburger, add jalapeno (optional), grated cheese and pour on top the rest of cornmeal. Oven 400 degrees F. until light golden brown and pick is clean.
