2 c. calico beans (13 different beans) 2 qts. water 1 lg. onion, chopped 2-3 tsp. salt 1 qt. canned tomatoes Pepper 1 1/2 tsp. - 1 tsp. chili powder 2 cloves garlic, minced Rinse beans well and place in large pan. Cover with water and soak overnight. Drain and place in a large pot. Cover with 2 quarts water. Add salt to taste. Simmer for 2 1/2 - 3 hours, partially covered, stirring occasionally. Add onion and tomatoes, chili powder and garlic. Season to taste. Cook 30 minutes longer. |
