MEATBALLS (ALBONDIGAS) : 1/2 c. bread or cracker crumbs 1/4 c. milk 1 egg 1/2 lb. each ground beef and ground pork Salt and pepper 1/4 c. minced onion 2 cloves garlic, minced 1 tbsp. fresh mint, minced or 2 tsp. dried Mix together and shape into small balls. Brown lightly on all sides. SOUP: 1 tbsp. oil 1 sm. onion, chopped 1 clove garlic, minced 5 c. water or chicken broth 4 chicken bouillon cubes (if no broth) 1/2 (8 oz.) can tomato sauce 1 carrot, sliced 1 zucchini, sliced 2 tomatoes, chopped Heat oil in large pan. Cook onion and garlic until soft. Stir in broth and tomato sauce. Simmer 10 minutes. Add meatballs and carrots. Simmer 20 minutes. Add zucchini and tomatoes. Simmer 10 minutes. |
