COCK-A LEEKIE SOUP
 

2 tbsp. butter
4 c. chopped leeks (white part only)
1 1/4 lbs. skinned & boned chicken breast in 1" cubes
1 qt. water
2 oz. uncooked pearl barley
4 bouillon cubes (chicken) or 4 pkgs. Weight Watchers broth & seasoning mix
1 Bouquet Garni (6 peppercorns, 6 cloves, 1 bay leaf tied together in piece of cheese cloth)

In a 4 quart saucepan, heat 1 tablespoon butter until bubbly and hot. Add leeks and saute, stirring occasionally until translucent. Remove to a bowl and set aside. Heat remaining butter, add chicken and saute stirring until no longer pink. Return leeks to pan, add water, barley and broth mix. Stir. Add Bouquet Garni. Bring to a boil, reduce heat, cover, simmer until barley is cooked, about 30 minutes. Discard garni. Makes 4 (2 cup) servings.
