LAMB STEW WITH DILL
 

2 lb. lean, boned lamb, cubed
2 tbsp. olive oil
2-3 med. onions, sliced
4-5 med. potatoes, cubed
2 cloves garlic, minced
1/2 tsp. black pepper
2 tsp. dill seed or weed
2 qt. water
1 lb. barley

Brown meat in olive oil in frying pan. Stir in onion and garlic. Boil water in stew pot. Add vegetables, potatoes, barley, meat and onion mixture and spices. Simmer until meat is tender, about 2 hours. Serves 8-10.

For St. Patrick's Day, add Guinness Stout, Irish Soda Bread and the Clancey Brothers. Enjoy!
