CATFISH STEW
 

10 lbs. filleted catfish
4 lbs. onions
1 med. can tomato paste
Hot sauce
10 lbs. white potatoes
1 qt. can tomatoes
2 lbs. slab bacon
Salt & pepper to taste.

Peel and dice potatoes and put into large stew pot with catfish and add water to cover. Dice up bacon and fry; then put onions cut in sections, in blender and blend until almost mush. Drain bacon and add to onions and rest of ingredients. After stew has cooked about 1 hour, add tomatoes and tomato paste. Cook until done.
