LARISON'S HOMEMADE TURKEY SOUP
 

1 turkey carcass
2 lg. onions, with skins
1/2 stalk celery
5 carrots

Place turkey carcass in large pot along with onions, carrots and celery. Add water to cover. Bring to boil and simmer for 1 hour. Remove from heat and cool.

Take carcass from stock and remove meat. Set meat aside. Strain stock, return to boil and add:

4 c. diced carrots
4 c. dice celery
Turkey meat
1 1/2 c. rice (per 2 gal. of water or stock)

Simmer until vegetables are tender.
