YANKEE BEAN SOUP
 

1 lb. washed pea beans
3 chopped onions, medium size
2 carrots, diced
2 bay leaves
2 stalks celery, chopped
Few sprigs of parsley
1 ham bone, with some meat

Cover 1 pound washed pea beans with 2 1/2 quarts of water; bring to a boil and boil for 2 minutes. Cover and let stand 1 hour (off of the heat).

Add onions, carrots, bay leaves, chopped celery, parsley, and ham bone with meat. Bring to a boil and simmer (covered) for 2 hours, or until beans are mushy. Remove the bay leaves and ham bone; put meat back into the soup. Season to taste and thicken if necessary. Makes about 2 1/2 quarts.
