CLAM BOIL
 

Steamer or quahogs
White potatoes (halved with jackets on)
Sweet potatoes (halved with jackets on)
Hot dogs Sausages (mild)
Chourico (cut in 2 inch lengths)
Eggs (optional)
Melted butter
Crushed hot red peppers (not the dry kind - this in moist & found in the pickle department at the market)
Onions (whole, peeled)

Put steamers or quahogs in the bottom of a large pot with 2 inches of water.

Then layer white and sweet potatoes, hot dogs, sausages, chourico, onions, eggs and a good size onion placed right on top.

Mix 1 tablespoon crushed hot peppers with 1/2 cup water and pour allowing mixture to filter through the boil.

Cover pot with lid and bring to a boil and then lower heat and let it steam.

When the large onion place right on top is cooked - so is the boil, approximately 1 1/2 hours.

Serve with melted butter and broth from the boil for dipping clams. ENJOY!
