3 or 4 qts. clams washed at least 3 times 3 lbs. frankfurters 3 lbs. pork sausage 5 lbs. sweet potatoes (peeled) 30 white potatoes, sm. to med., peeled 21 white onions (med. size), peeled) 1 lb. chourico sausage (preboiled and cut in sm. piece) In a large pot (I use my canning pot), arrange in layers: Bottom layer #1 Clams, next the 2 onions 3 sweet potatoes 4 white potatoes 5 pork sausages 6 chourico 7 frankfurters Put cold water in pot to cover clams. Salt and pepper the potatoes to taste (optional). Put one onion on top of everything. Cover tightly. Bring to a boil and simmer until onion on top is tender and cooked through. |
