CLAM CAKES
 

4 cans minced clams
2 pkgs. saltine crackers
2 beaten eggs

Drain juice from clams, pour clams in large bowl, mix in egg. Crumb crackers and add to clam mixture, adding clam juice to a sticky but firm consistency, flour hands and make patties with clam mixture patting each side in flour. Cook in 1" of oil until golden brown on each side. Makes about 10 patties depending on size.
