IMPERIAL STIR - FRIED DUNGENESS CRAB
 

1 whole dungeness crab, chopped in sm. pieces
1/2 red bell pepper, diced
2 stalks scallions, chopped
1/2 med. onion
1 tsp. chopped ginger
1 tsp. chopped garlic
1/4 tsp. salt
1/2 tsp. ground black pepper
1/4 tsp. powdered ginger
3 c. vegetable oil
Cornstarch

Coat chopped crab pieces with small quantity of cornstarch. Heat wok to medium and lightly fry crab in the oil. Strain ginger, garlic, onion, scallions and red pepper. Stir fry for a few seconds, then add the crab and continue stir frying until the edges of the crab brown. Add salt, pepper, five spices and ginger.
