CRAB ENCHILADA
 

1 can enchilada (large) sauce
1 pkg. flour tortillas (10)
1 1/2 lbs. imitation crab meat, chopped
2 lbs. Monterey Jack cheese, grated
1 lb. Cheddar cheese, grated
1 lg. can chopped olives
3 green onions, sliced

Lay open tortillas in large shallow baking dish, spoon in sauce, fill each tortilla with portions of crab meat, cheese and olives. Roll and place seam down. Sprinkle extra cheese, olives and all onions on top. Bake at 350 degrees for 40 minutes or until cheese is melted.
