1 lb. (or 3 c.) cleaned, cooked crab meat, lobster or shrimp 1/3 c. butter or other melted fat 3 tbsp. flour 1/2 tsp. salt 1/2 tsp. paprika Dash cayenne 1 1/2 c. coffee cream 3 beaten egg yolks 2 tbsp. sherry Toast points Remove any shell or cartilage from shellfish, being careful not to break the meat into small pieces. Melt butter; blend in flour and seasonings. Add cream gradually and cook until thick and smooth, stirring constantly. Add meat of shellfish; heat. Remove from heat and slowly stir in sherry. Serve immediately on toast points. Serves 6. |
