2 chicken lobsters (3/4 - 1 lb. each) 3/4 lb. shrimp 3/4 lb. scallops 1 c. bread crumbs (Introvigne) 1/4 lb. fresh mushrooms, chopped Cook and peel shrimp. Cut lobster, remove roe, and intestinal vein. STUFFING: Mix shrimp and scallops together. (Cut into chunks first.) Add 3/4 - 1 cup bread crumbs and mushrooms. Mix together. Stuff lobsters. Bake 350-400 degrees, 30-40 minutes. (To preserve moistness cover with layers of large lettuce leaves.) |
