1 med. head lettuce, torn into pieces 1 med. red onion, sliced thinly 1 med. green pepper, cored and sliced 4 stalks celery, sliced thinly 6 radishes, sliced 3 med. carrots, peeled and shredded 3 sm. zucchini or summer squash, sliced thinly Place torn lettuce in bottom of large salad bowl. Layer red onions, green pepper, celery, radishes, zucchini on top of lettuce. Layer shredded carrots over all. 1 pkg. frozen peas, uncooked 2 c. mayonnaise 2 tsp. sugar 2 tbsp. parsley 1 tsp. salt Layer frozen peas on top of carrots. Mix mayonnaise, sugar, parsley, and salt together. Spread evenly over frozen peas and seal edges. Sprinkle with Parmesan cheese. Cover and chill overnight. When serving, lift salad with tongs to include all layers and toss. Yield 6-8 servings. |
