1 lb. fresh spinach
4 slices bacon
1/4 c. chopped onion
1 c. cranberries
1/2 c. red wine vinegar
1/4 c. water
1/4 c. brown sugar
Salt and pepper
Wash, dry and shred spinach, set aside.
Fry bacon until crisp, drain and crumble. To crumbled bacon, add onion and cranberries. Cook until cranberries are soft.
Add vinegar, water, brown sugar and salt and pepper to taste, cook 1 minute longer. Pour over spinach.
