SPINACH SALAD
 

1 bag (1 lb.) fresh spinach
1/2 lb. crisp fried bacon
1 red onion, sliced finely
Fresh mushrooms (optional)
Cherry tomatoes, halved (optional)

DRESSING:

1/4 c. sugar
1/4 c. vinegar
1 c. mayonnaise
1/2 c. milk
2 hard boiled eggs, grated

Clean and drain spinach. Tear into bite-size pieces. Fry (microwave) bacon, and drain. Crumble bacon on top of spinach. Add sliced onion. Add a few fresh mushrooms, sliced. Add cherry tomatoes, cut in half.

Combine dressing ingredients, except eggs, and heat to the boiling point. Pour over spinach; toss. Garnish with the grated eggs. Serve.

Makes 4 servings.
