SPINACH & BEAN SPROUT SALAD
 

1 pkg. raw spinach
1 (14 oz.) can bean sprouts or use fresh sprouts
4 strips bacon (Bacos can be used instead)
4 hard-boiled eggs

DRESSING:

1 c. catsup
1/2 c. sugar
1/4 c. vinegar
1/4 c. salad oil

Wash and cut or tear up spinach leaves. Fry bacon, drain and break into small pieces. Chop hard-boiled eggs. Add bean sprouts, bacon and eggs to the spinach.

Mix the dressing ingredients and allow to stand at room temperature until the sugar dissolves. Pour over spinach mixture and toss. Serves 8.
