GARDEN SALAD

Leaf lettuce
Basil leaves
Spinach
Nasturtium leaves & flowers
Any fresh vegetables you like that are available, mushrooms & radishes are nice

Pick lettuce, spinach, basil and nasturtium leaves and flowers. Wash well and dry on a dish towel or paper towels (they have to be washed and dried, it's not ok to skip this or you will have a grit salad if you don't wash them and ad soggy salad if you don't dry them). Tear them into pieces and put into a salad bowl. Cut any other vegetables and add to the bowl.

I like to make a dressing of a little oil, a little vinegar, a little milk and a whole lot of grated Parmesan cheese mixed with some crushed garlic, finely chopped onion and celery seeds mixed until it is just thick enough to pour. This is obviously a spring salad unless you can find the basil and nasturtium in the store. Or you can try to grow these in the house in the winter. They all do well with cool temperatures but will need a whole lot of light. By the way, nasturtium leaves are peppery and the flowers even more so.
