FRESH SPINACH SALAD
 

Fresh spinach (1 bunch to make a salad to serve approx. 6 as a side dish)
1 to 2 c. fresh bean sprouts (to taste)
Approx. 6 strips bacon, cooked & crumbled
Approx. 1/2 c. sliced ripe olives
Approx. 1/3 c. Parmesan cheese (to taste)
Approx. 2 tsp. lemon juice (to taste)
Croutons, if desired
Salt & pepper

Wash spinach leaves and pat between paper towels until semi-dry; tear into bite-size pieces into large bowl. Rinse bean sprouts and drain well. Add to spinach along with crumbled bacon and sliced olives and toss all together. Sprinkle lemon juice, Parmesan cheese and salt and a very little pepper over this and toss well to coat. Serve with a few croutons over the top if desired.
