ORANGE - CARROT JELLO SALAD
 

1 lg. pkg. orange jello
1 (8 oz.) pkg. cream cheese
1 (13 oz.) can pineapple with juice
3 or 4 raw carrots
Lemon juice (optional)

Mix jello using hot water only. Put all ingredients into blender or food processor; blend, then pour into mold. This is very tasty and holds firm in warm weather. Serves 8-10.

Optional: Squeeze a little fresh lemon juice into ingredients before pouring into mold.
