CORNISH HENS WITH RICE STUFFING
 

2 tbsp. butter
1/2 c. sliced almonds
1/2 c. finely chopped celery
1/4 c. chopped onion

Combine ingredients into Ultra 1 quart casserole. Cover and microwave 2 to 4 minutes at high, or until celery is tender. Set aside.

1 1/2 c. cooked rice
1/4 c. raisins
2 tsp. parsley flakes
1/2 tsp. salt
1/8 tsp. sage, thyme, pepper, rosemary

Stir into above mixture. Use to stuff 4 Cornish hens or a 3 to 4 pound chicken.

Place 2 Cornish hens in oval roaster, breast side up. Rub with bouquet sauce (equal parts of boquet and water) and melted butter. Sprinkle NO SALT poultry seasoning mix. Cover and cook 12 minutes per pound (encludes time for stuffed hens). Unstuffed Cornish hens cook approximately 6 minutes per pound.
