4 tbsp. butter 1 tsp. salt 1/2 tsp. pepper 3 tbsp. chopped celery 2 tbsp. chopped onion 2 tbsp. chopped pimento (optional) 1/2 c. chopped pecans 4 c. cooked wild rice 4 Cornish hens Melt butter in frying pan. Saute onions and celery in butter. Add pecans, celery, onions and pimento to wild rice. Season with salt and pepper to taste. Lightly stuff Cornish hens; place in a shallow baking pan and surround with remaining dressing. Brush hens with melted butter; roast about 1 hour at 350 degrees. |
