3 (16 oz.) cans red beans or kidney beans 1/4 c. chopped onion 1/2 tsp. black pepper 1 clove garlic, chopped 1/2 tsp. salt 1 bay leaf 1/4 tsp. hot sauce (optional) 2 strips bacon, cut into 1 inch pieces Pinch of ground thyme 2 tbsp. Worcestershire sauce 1 lb. Cajun style smoked sausage, cut into 1 inch pieces 6 c. hot cooked rice Place all ingredients except sausage and rice in a 2 quart saucepan. Bring to a boil; reduce heat to simmer. Cover and cook for 2 hours, stirring occasionally. Add sausage to red beans the last 30 minutes of cooking time. Serve over rice - 1 cup red beans over 1 cup rice. Delicious!! |
