CORNISH GAME HENS AND RICE
 

1 c. long grain rice
1 envelope Italian salad dressing mix
1 can condensed cream of chicken soup
2 Cornish game hens, thawed

Spread rice in a 3-quart shallow baking dish and bake at 375 degrees for 15 minutes, stirring occasionally until golden.

Combine salad dressing mix with 2 1/2 cups boiling water and the chicken soup, then stir into rice. Cut game hens in half lengthwise. Season, if you wish, with salt and pepper. Place game hens, cut side down, on top of rice. Cover dish tightly with foil. Bake at 350 degrees for 1 hour. Uncover; bake 30 minutes longer or until rice and hens are tender.
