LENTIL AND RICE SALAD
 

1 2/3 c. cooked rice, cooked in fat-free chicken broth, cooled
1 c. cooked lentils, cooled
1/2 c. chopped fresh tomatoes
1/4 c. sliced green onions, including tops
1 tbsp. snipped fresh parsley
1 clove garlic, minced
1/4 tsp. ground black pepper
1/4 c. Italian salad dressing (use oil free)
Lettuce leaves

Combine all ingredients except lettuce in medium bowl. Serve on lettuce leaves. Makes 4 servings.
