QUICK PEANUT BUTTER STICKS
 

1/2 c. granulated sugar
1/2 c. packed brown sugar
1/2 c. peanut butter
1/3 c. vegetable oil
1 egg
1 c. all purpose flour
1/2 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
Granulated sugar

Heat oven to 375 degrees. Lightly grease cookie sheet. Mix 1/2 cup granulated sugar, brown sugar, peanut butter, oil and egg in large bowl. Mix until smooth. Stir in flour, baking powder and baking soda and salt, which was sifted well first together.

Divide dough into halves. Shape 1/2 into 2 strips about 15" x 1 1/2", about 3" apart on cookie sheet. Cover remaining dough of the 2 strips on cookie sheet, flatten each strip to 3" wide with fork dipped in sugar. Bake until golden brown, 6 to 7 minutes for soft cookies or 8 to 9 minutes for crisp cookies. Cool 2 minutes before removing from cookie sheet. Cut each strip crosswise into 1" slices. Remove from cookie sheet. Repeat with remaining dough. Makes about 5 dozen cookies.
