QUICK 'N EASY CHILI RELLENOS
 

1/2 lb. grated cheese
4 eggs, beaten
4 oz. can whole chilies
2 tsp. thickener (flour, bread crumbs)
4 oz. evaporated milk
8 oz. salsa

In a 9x13 inch pan, spread grated cheese evenly across bottom. Rinse chilies and split open place layer of chilies over cheese. Beat eggs with thickener and evaporated milk. Pour over chilies and bake about 20 to 30 minutes at 350 degrees. Casserole is done when center of eggs are set. Top with salsa and serve. Serves 6.
