PUDDING COOKIES
 

2 1/4 c. flour
1 tsp. baking soda
1 c. butter, softened
3/4 c. firmly packed light brown sugar
1 tsp. vanilla
1 (4 oz.) Jello instant pudding, for low calorie cookies use sugar free Jello instant pudding
2 eggs
1 (12 oz.) pkg. chocolate chips
1 c. nuts, chopped; optional

Mix flour with baking soda. Combine butter, sugar, pudding mix, and vanilla in large mixing bowl. Beat until smooth and creamy. Beat in eggs. Gradually add flour mixture. Stir in chips and nuts. Batter will be stiff. Drop from teaspoon onto ungreased cookie sheets, about 2 inches apart.

Bake at 375 degrees for 8-10 minutes. High altitude, bake 9-11 minutes.

You can substitute oatmeal for chocolate chips and add 1 cup raisins, or add peanut butter instead of chocolate chips or try something different.
