3 1/2 tbsp. all-purpose flour 1 1/3 c. sugar Dash salt 3 eggs, separated 3 c. milk, evaporated 1 tsp. vanilla extract 1 (12 oz.) box vanilla wafers 1/4 c. + 2 tbsp. sugar 1 tsp. vanilla extract 5-6 ripe bananas Combine flour and 1 1/3 cups sugar in pan. Beat egg yolks and add evaporated milk mixing well. Stir into dry ingredients; cook over medium heat until thickened - stirring constantly. Remove from heat and stir in vanilla. Layer cookies, bananas and filling. Top with meringue: Beat egg whites until foamy. Add remaining sugar, 1 tablespoon at a time, beating until stiff peaks form. Stir in vanilla. Bake at 425 degrees until brown. |
