TAPIOCA APPLE PUDDING
 

1 cup pearl tapioca
1 pint cold water
1 cup sugar
Pinch of salt
3 eggs, well beaten
1 quart milk
1/4 teaspoon nutmeg
5 green apples, cored
whipped cream, for topping

Soak 1 cup old-fashioned pearl tapioca overnight in 1 pint of cold water.

In the morning, add sugar, a pinch of salt, eggs, milk, and freshly grated nutmeg. Stir all together.

Wash and core apples. Place in a casserole dish. Pour the tapioca mixture over the apples.

Bake 1 hour at 350°F.

Top with whipped cream, sweetened with a little confectioners' sugar and a drop of vanilla or rum.

Variation: Add 1/4 teaspoon ginger and cinnamon.

Spoon an apple into serving dish; surround with pudding and top with sweetened whipped cream.

Makes 5 servings, 1 apple each.
