1/4 c. Puritan oil 3/4 c. brown sugar 1 c. unbleached white flour 2 tsp. baking powder 1 c. 1% buttermilk 1 egg white 1 tsp. baking soda 1 c. oat bran 1 c. raisins or blueberries 1/3 c. chopped walnuts In a mixing bowl and with a wire whisk, combine oil, brown sugar, flour, and baking powder. Add remaining ingredients and stir just until moistened. Fill muffin cups 3/4 full with batter. Bake at 400 degrees for 20 minutes or until toothpick inserted comes out clean. Remove from tins and cool on wire racks. Makes 18 muffins. |
