STRAWBERRY MUFFINS
 

1 3/4 c. flour
1/4 c. sugar
3/4 tsp. salt
2 tsp. baking powder
1/4 tsp. baking soda
2 eggs
1/2 c. melted butter
1 tsp. vanilla
1 1/3 c. finely chopped strawberries

Preheat oven to 400 degrees. Sift the first 5 ingredients twice. Then, in a separate bowl beat eggs, butter and vanilla. Then add strawberries to this bowl. Fold mixture into dry ingredients. Fill muffin cups 2/3. Before baking, you can add a streusel topping or leave plain. Bake for 20 to 25 minutes.
