APPLE, CINNAMON AND RAISIN MUFFINS
 

2 c. flour
2/3 c. brown sugar
1 tbsp. baking powder
1/2 tsp. grated nutmeg
1 egg
1/3 c. safflower oil
2/3 c. unsweetened applesauce
1 tart apple, peeled and finely diced
1 tsp. cinnamon
1/2 c. raisins
1/2 c. chopped nuts

In large bowl sift together flour, sugar, baking powder and nutmeg. In medium bowl combine egg, oil and applesauce. Whisk until blended.

In another medium bowl toss together apple and cinnamon until coated. Stir in raisins and nuts. Pour egg mixture over dry ingredients and combine. Add apple mixture and blend with few strokes. Bake at 400 degrees in greased muffin pans for 20-25 minutes until golden.
