IRISH SODA BREAD
 

2 heaping c. flour
2 tbsp. sugar
1 1/2 tsp. salt
1/4 tsp. cream of tartar
1 tsp. baking soda
2 tsp. baking powder
1 c. milk

This soda bread may be used as it comes out of oven but we slice it in half and fry in the bacon grease before the eggs are fried - this is an old-time Irish breakfast.

Mix first 6 ingredients. Add milk and toss lightly; perhaps a little more milk or less but so the consistency is like a biscuit dough. Much handling makes it tough. Then roll or pat it out and cut any shape with knife. Place on cookie sheet. Bake 10-15 minutes at 400 degrees.
