MY GRANDFATHER'S HOMEMADE BREAD AND
ROLLS RECIPE
 

1 c. potato water (lukewarm & mashed through sieve)
1 c. boiled milk
1 pkg. dry yeast
1 egg
1/4 c. sugar or honey
1 tbsp. butter
3 1/2 c. flour, unbleached white or mixture of white & whole wheat

Cool milk to lukewarm. In bowl place milk, egg, sugar and butter. Add yeast to potato water and add those to milk mixture. Add 1 cup flour; mix well. Keep adding flour by 1/2-1 cup increments, mixing well after each addition. Use more flour if needed, so bread is not sticky when kneaded. Grease large bowl and add bread (greased). Cover lightly and let rise until double in bulk (approximately 1 hour). Punch down, split in half and place in greased loaf pan or make rolls in cake pan (1 pad of butter under/side each roll). Bake in preheated oven for 30 minutes. Can be frozen after cooled. Makes 2 loaves.
