PUMPKIN PECAN MUFFINS
 

2 c. all-purpose flour
1 tsp. baking powder
1/2 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. allspice
1/3 c. chopped pecans
2 eggs, beaten
1 tsp. vanilla
1 c. canned pumpkin
1/3 c. vegetable oil
1/4 c. milk
1/2 c. brown sugar

In a large bowl, combine flour, baking powder, baking soda, cinnamon, allspice, and nuts. In a separate bowl, mix together the eggs, vanilla, pumpkin, oil, milk, and brown sugar, add to the flour mixture. Stir until just moist. Fill greased or paper lined muffin cups 2/3 full. Sprinkle with topping. Bake at 400 degrees for 20-25 minutes. Makes 12 muffins.

TOPPING:

In small bowl, mix together 2 tablespoons rolled oats, 2 tablespoons flour, 2 tablespoons brown sugar, 3 tablespoons chopped pecans, 1 teaspoon cinnamon. Cut in 3 tablespoons butter until crumbly.
